Rice pudding

Rice pudding

A neglected yet delicious pudding that you can enjoy all year round. You can prepare it with fresh or compote fruit. Rice pudding is a delicacy that will fill you up and satisfy the taste buds of not only sweet-toothed children.

Ingredients · Servings 3
  • 200g rice
  • 750ml milk
  • 50 g caster sugar
  • 100 g butter
  • 3 eggs
  • 400 g drained compote fruit
  • salt
  • 1 handful of raisins
  • butter for greasing the baking dish
Method · 1 h 40 min
  1. Grease the baking dish with butter.
  2. Rinse the rice with water, drain and cook in milk that we have sweetened and lightly salted.
  3. Separate the yolks from the whites and beat the whites until stiff peaks form.
  4. Pour the cooked rice into a bowl and stir in the hot butter. Once cooled, add the egg yolks and finally gently fold the egg whites into the mixture.
  5. Spread half of the mixture into the prepared baking dish, add a layer of drained compote on top. For extra flavor, add a handful of raisins and cover with the other half of the rice.
  6. Cover the baking dish and bake in an oven preheated to 180 °C for about 50 minutes. Towards the end of baking, uncover the casserole and finish baking until golden brown.
