Polenta is an Italian dish similar to oatmeal, but very thick and dense. Before corn arrived in Europe, it was made with other grains, such as wheat or spelt. Today, the dish is made with cornmeal. Initially a dish of poor peasants, it gradually became served in expensive Italian restaurants.
Ingredients
- 1 liter of water
- 250 ml milk
- 1.5 teaspoons of salt
- 160 g corn flour
- 3 tablespoons of butter
- 50 g grated Parmesan cheese
- fresh herbs to taste
Pour the water and milk into a saucepan and bring to a boil. Then add the salt. Gradually add the cornstarch, stirring constantly. Reduce the heat to very low, cover, and cook for 25-35 minutes, until thick, fluffy, and starting to pull away from the sides of the pot. Be sure to stir frequently to prevent anything from sticking to the bottom.
Meanwhile, grate the Parmesan cheese using a fine grater. Remove the polenta from the heat and add the butter, grated cheese, and salt (if necessary). Mix thoroughly and taste. Serve the polenta warm, sprinkled with your favorite herbs. Sprinkle with additional grated cheese to serve.
