Miruna breaded in flour only
Even frozen fish breaded in just flour will fry beautifully, and the breading will definitely stay put. I served it with a Chinese cabbage salad.
Ingredients
- approx. 1 kg of fish (I used hoki)
- lemon juice
- lemon pepper
- frying oil
- flour for breading
- Sun
- Chinese cabbage salad:
- 1 medium Chinese cabbage
- fresh, green cucumber with peel
- small wine apple
- medium carrot
- salt, pepper and a pinch of sugar to taste
- 2 tablespoons of mayonnaise
- 2 tablespoons of thick Greek yogurt
Cut the fish into small pieces. Pat dry with paper towels. Sprinkle with salt and lemon pepper. Transfer to a bowl and drizzle generously with lemon juice. Set aside for half an hour to allow the spices to penetrate. Coat in flour and fry in hot oil. Once cooked, transfer to a paper towel to drain excess oil.
Remove the outer leaves from the cabbage. Chop it. Transfer to a bowl and sprinkle lightly with salt to soften. Add the grated carrot and apple. Mix the mayonnaise with the yogurt. Add it to the cabbage. Mix well. Season with salt, pepper, and a pinch of sugar to taste. Garnish with dill sprigs and cherry tomatoes.
