satay soy pieces and rye tomato rice

satay soy pieces and rye tomato rice

Ingredients · Servings 3 annosta
  • 3kourallista soijapaloja
  • 5dl vettä
  • 1,5rkl haluamaasi fondia
  • 4 salottisipulia
  • 1rkl seesaminsiemenöljyä
  • 2-3rkl satay-kastiketta
  • 0,5dl vettä
  • 1,5dl kevytkermaa
  • 1rkl soijakastiketta
  • 1tl sitruunaruohotahnaa
  • 1,5dl rukiinjyviä
  • 2,5dl täysjyväriisiä
  • 2tl suolaa
  • 4rkl aurinkokuivattua tomaattia kuutioina
Method · 1 h

Untreated rye grains should be soaked overnight in plenty of water. So prepare them the day before. Pour off the soaking water from the grains, rinse lightly and place them in boiling, salted water. Cook the grains for about 20 minutes and then add the rice. Cook for another 40 minutes, pour off the excess cooking water and stir in the sun-dried tomatoes before serving.

Boil 5dl of water in a saucepan, season the water with fondue and stir in the soy pieces. You can turn off the heat, but leave the saucepan on the hot plate. Let the soy pieces soak for about 10 minutes.

Chop the shallots into small pieces. Heat the sesame oil in a frying pan and sauté the onions for a moment. Add the swollen soy pieces and fold them into the onions. Season with soy sauce and add the Satay sauce and water. Mix thoroughly and then add the cream and lemongrass paste. Heat the sauce to a boil and serve.
