Oyster mushroom soup à la tripe

The name may put some off, but it would be a shame not to give this recipe a chance. The process is very quick and easy. You will definitely enjoy this hearty oyster soup. Fake tripe soup is very similar in appearance and taste to the "real" one.

Ingredients · Servings 4
  • 250 g oyster mushrooms
  • 1 onion
  • 1 carrot
  • 3 cloves of garlic
  • 2 spring onions
  • 1.5 liters of vegetable broth
  • 2 tablespoons plain flour
  • ground paprika (sweet or hot)
  • marjoram
  • salt
  • ground pepper
  • oil
  • fresh parsley
Method · 55 min
  1. Peel the onion and chop finely. Peel the carrot and cut it into strips together with the cleaned oyster mushroom.
  2. Sauté the finely chopped onion in the hot oil. Add the mushrooms and carrots.
  3. Let it fry for a while, add the flour and fry briefly. Finally, add the ground paprika (some of the paprika may be hot).
  4. Sauté only briefly so that the pepper does not become bitter. Pour in the cold broth and whisk.
  5. Season with salt, pepper and garlic. Add the chopped white parts of the spring onions and cook for about 20 minutes.
  6. Before the end of cooking, sprinkle with marjoram.
  7. Season the finished soup. Finally, sprinkle it with chopped spring onion tops and chopped parsley.
