Quick apple strudel

A delicate homemade strudel made from puff pastry with a fragrant apple filling can be prepared in no time with just a few basic ingredients. Thanks to the simple process, it is ideal even for beginners and tastes great while still slightly warm.

Ingredients · Servings 2 pieces
  • 500 g chilled puff pastry
  • 1 kg of apples
  • 2 vanilla sugars
  • ground cinnamon (to taste)
  • 1-2 tablespoons of starch (as needed)
  • 1 egg for brushing
  • a little plain flour for dusting
Method · 1 h
  1. Preheat the oven to 180 °C in advance. Line a baking sheet with baking paper.
  2. Wash the apples, peel them, remove the cores and grate them coarsely.
  3. Sprinkle the grated apples with vanilla sugar and ground cinnamon and mix. If the apples are very juicy, add starch.
  4. Divide the puff pastry into two parts. Lightly dust the work surface with flour and roll each part of the dough into a sheet.
  5. Divide the apple mixture evenly between both sheets of dough. Carefully roll the dough into strudels and transfer them to the prepared baking sheet.
  6. Crack the eggs into a cup, whisk with a fork and brush the surface of the strudels with it.
  7. Pierce the strudel in several places with a fork so that it does not crack during baking.
  8. Bake in the preheated oven until golden brown, about 25–30 minutes.
  9. Let the finished strudel cool briefly and serve.
