Bavarian muffins

A dish that reconciled us with the existence of school cafeterias in our childhood. Popular across generations. Try making them at home according to this detailed recipe. They will be delicious and will leave the memories of the cafeteria far behind.

Ingredients · Servings 1 dose
  • Dough:
  • 200 g plain flour (as needed)
  • 200 g semi-coarse flour (as needed)
  • 25 g fresh yeast
  • 40 g caster sugar
  • 250 ml milk
  • 30 g butter
  • 2 eggs
  • 1 pinch of salt
  • 4 tablespoons rum
  • frying oil
  • To the surface:
  • jam
  • 500 g cottage cheese from a tub
  • 3-4 vanilla sugars
Method · 2 h
  1. Sift the plain and semi-coarse flour into the bowl of the food processor. Make a well in the flour and crumble the yeast into it. Sprinkle a little sugar over the yeast, pour in a little lukewarm milk and sprinkle with flour. Cover the bowl with a cloth and leave in a warm place to rise, this will take about 15 minutes.
  2. After the yeast has risen, add salt, remaining sugar, melted lukewarm butter, remaining lukewarm milk, egg, rum to the bowl and let the dough rise in a food processor. If it is too thin, add a little more flour and use a wooden spoon to make a soft dough, which we finally sprinkle with a little flour. Cover the bowl again with a towel and let the dough rise in a warm place for about 30 minutes.
  3. Transfer the risen dough to a floured work surface and knead it a little more. Roll out the dough to a thickness of about 2 cm and cut out circles. Let the circles rise for another 10 minutes and then make a hole in one side.
  4. Fry the muffins in a saucepan in hot oil until golden brown on both sides. First, place them in the oil with the hole down and then turn them over. After frying, let them drain on a napkin.
  5. Beat the cottage cheese and vanilla sugar with a hand mixer.
  6. Decorate the muffins with jam and flavored cottage cheese.
