Tomato and zucchini gratin

Ingredients
  • 4rkl oliiviöljyä
  • 1 iso sipuli viipaleina
  • 2 kesäkurpitsaa viipaloituna/kuutioina
  • 3 valkosipulinkynttä purskattuna
  • tuoretta persiljaa nippu
  • tuoretta basilikaa
  • suolaa ja mustapippuria
  • 3 tomaattia pilkottuna
  • parmesaani juustoa raaastettuna/pussista
Method
  1. Kuumenna uuni 200-asteiksi. Kuumenna 1 rkl oliiviöljyä pannussa ja kuullota sipuleita n. 5 min ja lisää kesäkurpitsa ja kypsennä n. 10 min. Sekoita usein. Laita tehosekottimeen loput oliiviöljystä(3 rkl), persilja nippu, basilikaa maun mukaan sekä mausteet(suola ja pippuri) sekä tee niistä "tahna". Siirrä sipuli-kesäkurpitsaseos uunivuokaan ja ripottele päälle öljy-yrttiseos, tomaattihakkelus ja lisää lopuksi pinnalle parmesaaniraaste.
  2. Gratinoi paistos uunissa n.20 min
  3. Hyvä lisäke monelle ruualle/salaatin paikalle tai ihan muuten vaan!

Preheat the oven to 200 degrees. Heat 1 tablespoon of olive oil in a pan and sauté the onions for about 5 minutes and add the zucchini and cook for about 10 minutes. Stir frequently. Put the rest of the olive oil (3 tablespoons), a bunch of parsley, basil to taste and spices (salt and pepper) in a high-speed blender and make a "paste". Transfer the onion-zucchini mixture to a baking dish and sprinkle with the oil-herb mixture, chopped tomatoes and finally add grated Parmesan on top.

Gratinate the roast in the oven for approx. 20 minutes.

A good addition to many dishes/in place of salad or just for fun!
