Poultry risotto

A simple homemade risotto made with chicken, rice and vegetables is a popular dish that will satisfy and please the whole family. Thanks to cheese, watercress and ketchup, it acquires a distinctive taste typical of Czech classics.

Ingredients · Servings 4
  • 2 chicken quarters (or 4 thighs)
  • 400 g frozen vegetable mix (with corn or peppers)
  • 300g rice
  • 100 g grated cheese
  • butter
  • salt
  • ground pepper
  • watercress
  • ketchup
Method · 1 h 10 min
  1. Place the chicken in a pot, cover with water, add salt and cook until tender (about 20–30 minutes).
  2. Remove the cooked meat, let it cool slightly, peel it and cut it into smaller pieces.
  3. Cook the rice in salted water according to the instructions and drain.
  4. Melt the butter in a pan and add the frozen vegetables. Sauté for a few minutes until tender.
  5. Add the cooked rice and chicken, mix, season with salt and pepper. Heat the mixture briefly.
  6. Sprinkle with grated cheese, chopped watercress and serve with ketchup.
