Soft cakes glazed with limoncello

These soft, limoncello-glazed tarts are delicious pastries, perfect for enjoying at the end of a meal. They're delicious, and the distinctive flavor created by the addition of one of the most beloved and fragrant liqueurs makes them even more indulgent.

Ingredients

  • 00 flour
  • 250 g Plain yogurt
  • 150 g Eggs
  • 3 Sugar
  • 150 g Seed oil
  • 100 ml Grated zest of one lemon A sachet of baking powder Butter to taste For the limoncello glaze: 100 g of icing sugar Limoncello to taste

Preparing the cakes

To make these sweets, start by whisking the eggs and sugar until the mixture is light and fluffy. Then, slowly add the seed oil while continuing to whisk. Add the yogurt and incorporate completely, then add the grated lemon zest. Sift the flour and baking powder and gradually incorporate them into the mixture until smooth.

Butter and flour a cake pan and pour in the mixture. Bake in a preheated oven at 180°C (350°F) for about 30 minutes. Test with a toothpick, then let cool completely and carefully unmold. Now make the glaze: pour the powdered sugar into a bowl, add a tablespoon of limoncello, and begin whisking vigorously until the glaze is absorbed. Add more if it's too thick: the consistency should be that of a smooth, creamy consistency. Drizzle the limoncello glaze over the cakes and serve immediately!
