Ricotta Croquettes
These pillowy, cheesy ricotta dumplings are the ultimate quick comfort food, perfect for when you need a savoury treat that comes together in minutes. Made with just a handful of simple ingredients—fresh ricotta, hard cheese, egg, and flour—these golden-fried croquettes are light, airy, and incredibly satisfying.

- 1 ¼ cups ricotta
- 2 large eggs
- ½ cup Parmigiano-Reggiano or similar hard cheese, grated
- 1 cup all-purpose flour
- 2 teaspoons baking powder
- salt, to taste
- freshly ground black pepper, to taste
- fresh herb, to taste, optional
- 2 L frying oil, for frying
Method · 15 min
- In a large bowl, whisk together the ricotta, eggs, Parmigiano-Reggiano, flour, baking powder, salt, pepper, and fresh herbs (if using) until well combined.
- Using your hands or a spoon, form the mixture into small croquettes, about 1½ inches in diameter.
- Heat the oil in a large, deep pot over medium-high heat until it reaches 350˚F (180˚C).
- Working in batches, carefully lower the croquettes into the hot oil and fry for 3–4 minutes, turning occasionally, until golden and crispy on all sides. Remove the croquettes with a slotted spoon and drain on a paper towel-lined plate.
