Bábovka is undoubtedly a very popular Czech dessert and is baked with almost every type of dough. This is a version of the classic sponge cake, the marbling of which every housewife is proud of.

Ingredients · Servings 1 where
  • 4 eggs
  • 240 g semi-coarse flour
  • 200 g caster sugar
  • 10 tablespoons hot water
  • 6 g baking powder
  • 1 pinch of salt
  • 1 tablespoon cocoa
  • grease for removing molds
  • breadcrumbs for dusting the mold
Method · 1 h
  1. Grease the cake tin well with butter and sprinkle with breadcrumbs. Preheat the oven to 180 °C.
  2. Separate the yolks from the whites. Beat the whites with a pinch of salt until stiff peaks form.
  3. In a bowl, beat the egg yolks with the sugar, gradually adding 10 tablespoons of hot water (not boiling!). Beat until light foam forms. Then gradually add the flour and beat on medium speed, then gently fold the egg whites into the batter.
  4. Pour most of the batter into the pan and mix cocoa into the remaining smaller portion. Then pour the dark batter in a trickle onto the light batter to create marbling.
  5. Bake in an oven preheated to 180 °C for about 40 minutes. Test whether the cake is cooked by inserting a skewer - if no pieces of dough stick to it, the cake is ready.
  6. After baking, let the cake cool in the pan for a while, then turn the pan upside down and turn out the cake.
