Raffaello sponge cake is a true delight for all coconut lovers. Preparing this cake takes less than an hour, and the result is spectacular, not just visually. The wonderful combination of light, fluffy sponge cake layered with a delicate creamy filling and coconut flakes is a true delight not only for connoisseurs.

Ingredients · Servings > 6 people
  • 1 cup of flour
  • 3/4 cup of sugar
  • 4 eggs
  • 1 teaspoon baking powder
  • 500 ml of cream 36%
  • a bar of white chocolate
  • 125 g mascarpone cheese
  • 4 cups of coconut flakes
  • 1/2 cup of water
  • juice of 1/2 lemon
  • 1 tablespoon of sugar
  • 1 cup of coconut flakes
Method · 2 h
  1. To make the refaello cake, start by preparing the sponge cake. Separate the egg whites from the yolks and beat until stiff peaks form. While beating, add the sugar, then the egg yolks. Sift the flour into the egg mixture, then add the baking powder. Mix everything together with a spoon until all the lumps are gone.
  2. Line the bottom of a 24 cm springform pan with baking paper. Pour the sponge cake batter into the pan. Bake in a preheated oven at 180 degrees Celsius (350 degrees Fahrenheit) for about 35 minutes (or until a toothpick inserted into the cake comes out clean). Remove the baked Raffaello sponge cake from the oven and set aside to cool.
  3. Break the white chocolate into pieces, place in a bowl and melt in a water bath.
  4. Pour chilled 36% heavy cream into a bowl and whip until fluffy. Near the end of whipping, add the mascarpone cheese, then the melted and cooled chocolate. Set the mixer aside. Add the coconut flakes to the Raffaello cream and mix thoroughly.
  5. Remove the cooled sponge cake from the tin and cut it in half, into two equal-sized cake layers.
  6. Soak the base of the Raffaello cake with a punch made from water, lemon juice, and sugar. Spread two-thirds of the filling over the soaked base and spread it evenly over the cake. Cover the cream with the second layer of sponge cake. Soak the cake again with the punch. Place the remaining batter on top and spread it over the top and sides of the sponge cake.
  7. We decorate the raffaello cake on sponge cake with coconut flakes.
