Baked apple pastila

To make apple pastila at home (in the oven), you'll need a minimum of ingredients—apples themselves, preferably green ones, as they have more pectin. I usually make pastila from Semerenko apples, adding just a little sugar and water. If you use sweeter apples, you can even omit the sugar.

First, wash the apples and cut them into slices, removing the cores.

Now place the apple slices in a saucepan or saucepan.

Pour in water.

Cover and set over low heat. The apples should soften, which will take 20-30 minutes. When they look like the photo, remove the pan from the heat, let them cool slightly to avoid burning, and carefully drain the resulting juice. You can simply drink it; it's delicious, almost like a jelly, not juice.

Now you need to peel the apple slices. You can do this through a sieve, straining the mixture piece by piece, or by scraping the peel off each slice individually with a spoon.

Add sugar to the resulting applesauce and return to low heat, simmering for 15 minutes. Then, blend it with an immersion blender until smooth.

Line a baking sheet with parchment paper and grease it with a little vegetable oil. This will make it easier to remove the finished pastila from the parchment. Spread the applesauce in an even layer on the parchment.

Place the baking sheet in the oven and dry the pastila at 130 degrees Celsius for an hour and a half. Leave the door slightly ajar during drying. I simply place a spoon between the door and the oven itself.

The finished apple pastila looks like this. While it's hot, it will be slightly soft; let it sit at room temperature until it cools and hardens. To make it easier to remove from the parchment, cut the parchment and the pastila with scissors.

Now, using one side as a prying tool, remove the pastila from the parchment paper and roll each piece into a roll.

If you want to give this treat to your loved ones, wrap each roll in pieces of parchment, tie it with string or a bright ribbon, and place it in a beautiful box. Your sweet gift is ready!
