Macaroni with broccoli, chicken and Boursin

Macaroni with broccoli, chicken and Boursin

This macaroni with broccoli, chicken, and Boursin is a deliciously creamy casserole that fits perfectly into a busy week. The pasta and broccoli are combined with golden-brown fried chicken and a creamy Boursin sauce with garlic and herbs.

Ingredients · Servings 2
  • 250 gr macaroni
  • 1 broccoli, cut into florets
  • 150 gr Boursin Garlic & Herbs
  • 350 gr chicken cubes
  • 2 tbsp chicken seasoning
  • 2 tablespoons olive oil
  • grated cheese for gratinating
  • pepper
  • salty
Method · 30 min
  1. Preheat the oven to 180 degrees.
  2. Cook the macaroni together with the broccoli in plenty of salted water. Broccoli needs about 8 minutes, so adjust the cooking times accordingly. The pasta and broccoli do not need to be fully cooked yet, as they will continue to cook in the oven. Drain and set aside a few tablespoons of the cooking water. Season the cooked broccoli and macaroni with salt and pepper.
  3. Season the chicken with the chicken seasoning. Heat the olive oil in a grill pan or large frying pan. Cook the chicken over medium heat until golden brown and cooked through. Lower the heat and add the Boursin to the chicken. Let it melt slowly, then add about 4 tablespoons of the macaroni cooking water for a creamy sauce.
  4. Next, mix the macaroni and broccoli into the sauce and stir everything well together. Spoon the mixture into an oven dish and finish with grated cheese.
  5. Let the casserole gratinate in a preheated oven at 180°C for about 20 minutes, until the cheese is nicely golden brown.

Lynn's tip: Use the broccoli stem too, it's perfectly edible! Peel the stem and cut it into small pieces; no one will taste the difference and you won't have any leftovers!
