Cottage cheese salad with cauliflower
This rich cottage cheese salad is one of my favorites and a salad that we have made countless times at home. Cottage cheese is rich in protein and therefore very filling. The salad with the rich avocado, sweet crispy apples and plenty of fiber from cauliflower, edamame and kale is great for lunch or as a filling in a spinach pancake or other wraps and it can be varied with vegetables and fruit according to season.
It's a lovely creamy, crunchy, filling salad with a bit of sweetness and freshness from the apples. Serve it with anything from quinoa dishes to baked chicken breast or meatballs.

Cottage cheese salad with cauliflower

200 g pointed cabbage, finely chopped
½ cauliflower, finely chopped
100 g edamame beans, thawed
1 avocado, diced
1 apple, diced
½ organic lemon, a little juice and finely grated zest
200 g cottage cheese
salt and freshly ground pepper
Toss the kale, cauliflower, edamame beans, avocado and apple well together in a large bowl with lemon juice.
Then stir in the cottage cheese and season the salad well with salt and pepper.
