  • Heat oil in a deep frying pan. Add the onion and carrot and fry for 3-4 minutes until soft.
  • Then add the eggplant and zucchini and cook for another 5 minutes.
  • Add bell pepper and tomatoes (or tomato paste/juice). Stir.
  • Add salt and pepper, cover and simmer over low heat for 20-25 minutes, stirring occasionally.
  • 5 minutes before it’s ready, add chopped garlic and fresh herbs.
  • Serve hot or warm - as a separate dish or as a side dish.
