Cold-smoked salmon and cream cheese cake

Ingredients
  • 300g Maalahden limppua
  • 75g voita
  • 200g tuorejuustoa
  • 200g creme fraichea
  • 250g kylmäsavulohta
  • 1 salottisipuli
  • 1rkl hienonnettua tilliä
  • ½tl raastettua sitruunankuorta
  • 1rkl sitruunanmehua
  • 1rkl kuivaa valkoviiniä
  • 1 liivatelehti
  • ½tl mustapippuria
  • ½tl suolaa
  • ½tl sokeria
Method
  1. Kuutioi lomppu pinemmiksi kuutioiksi ja sulata voi. Aja limppu monitoimikoneessa irtonaiseksi massaksi, lisää lämmin sulatettu voi ja anna koneen pyöriä hetki, jotta massasta tulee tasianen.
  2. Peitä irtovuoan (halk. 20-22 cm) pohja leivinpaperilla, tasaa limppu-voi-massa pohjalle ja painele se käsin tiiviiksi "kakkupohjaksi".
  3. Laita liivatelehti likoamaan kylmään veteen.
  4. Kuutioi lohi ja salottisipuli pieniksi kuutioiksi. Nypi tillinoksat irti varsista ja hienonna "lehdet", älä käytä varsia. Raasta sitruunankuori ja purista mehu.
  5. Sekoita hyvin tuorejuusto, crème fraiche, lohi, tilli, sipuli ja mausteet. Lämmitä kattila ja kiehauta valkoviini, lisää sitruunanmehu ja hyvin vedestä puristettu liivate, joka saa varovasti sulaa lämpimään nesteeseen, älä keitä.
  6. Jäähdytä liivateleintä hetki, lisää se sitten varovasti sekoittaen tuorejuusto-lohimassaan. Kaada seos limppupohjan päälle ja tasaa hyvin. Laita kylmään yön yli. Koristele ennen tarjoamista katkaravuilla, mädillä, kirsikkatomaateilla, kurkulla, tillillä ja muilla yrteillä makusi mukaan.

Dice the loaf into smaller cubes and melt the butter. Process the loaf in a food processor until it becomes a loose mass, add the warm melted butter and let the machine run for a moment to make the mass into a dough.

Cover the bottom of a loose-bottomed cake tin (diameter 20-22 cm) with baking paper, spread the loaf-butter mixture on the bottom and press it with your hands into a tight "cake base".

Soak the gelatin sheet in cold water.

Dice the salmon and shallot into small cubes. Pluck the dill sprigs from the stems and chop the "leaves", do not use the stems. Grate the lemon zest and squeeze the juice.

Mix the cream cheese, crème fraiche, salmon, dill, onion and spices well. Heat a saucepan and bring the white wine to a boil, add the lemon juice and the gelatine, which has been squeezed well from the water and allowed to melt gently in the warm liquid, do not boil.

Cool the gelatine for a moment, then add it carefully to the cream cheese and salmon mixture, stirring. Pour the mixture over the loaf base and smooth it out well. Refrigerate overnight. Before serving, garnish with shrimp, roe, cherry tomatoes, cucumber, dill and other herbs to your taste.
