A good breakfast looks different for everyone. Sometimes mornings are rushed, and the first bite is eaten on the way to work. On days off, however, we like to take more time to start the day. Cottage cheese pancake bites are an excellent choice for those leisurely weekend moments.

  • 200g cottage cheese
  • 3 eggs (size M)
  • 1 TL Vanilleextrakt 🛒
  • 2 tablespoons of sugar
  • 80 g wheat flour
  • 1 tsp baking powder
  • 1 tsp cornstarch
  • 1 pinch of salt
  • 100g berries (of your choice, e.g., mixed from the frozen food aisle)
  • a little oil for frying
Method · 20 min
  1. Place the cottage cheese, eggs, and vanilla extract in a tall container. Blend everything until smooth.
  2. Add the sugar and mix everything thoroughly.
  3. Add flour, baking powder, cornstarch, and a pinch of salt. Mix everything together to form a thick batter.
  4. Wash the berries and pat them dry, or take them out of the freezer and let them thaw.
  5. Heat the oil in a small pan and heat it over medium heat.
  6. Drop small portions of batter into the pan using a tablespoon. Place a few berries directly on top of the spoonfuls.
  7. Cook the pancake bites for about 2-3 minutes until small bubbles form. Turn them over and cook for another 1-2 minutes on the other side until golden brown. Repeat until all the batter is used.

Cottage cheese pancake bites: a treat for those with a sweet tooth

The cottage cheese in the batter serves several purposes. It makes the mixture particularly moist and gives the finished pancakes a soft texture. At the same time, this ingredient provides a good portion of protein. This is especially practical in the morning, as a protein-rich breakfast keeps you feeling full longer and gives you energy for the hours ahead. The cheese's slight acidity harmonizes beautifully with the typical sweetness of a classic pancake batter. If you blend the mixture in a food processor before cooking, the small granules disappear completely, resulting in a particularly smooth pancake.
