Chicken in grated cheese
Chicken in grated cheese is an easy way to prepare chicken thighs with a temptingly browned surface. The meat is coated several times in flour and egg, and finally in finely grated Gouda, which forms a distinctive cheesy crust when baked.

- 2 boneless chicken thighs
- 1 egg
- 50 g plain flour
- 80 g goudy
- 1 tablespoon hot water
- 2 tablespoons oil or lard
- salt
Method · 45 min
- Pat the boneless chicken thighs dry, spread them out on a work surface, and lightly pound them into evenly thick cutlets over the foil. Salt them on both sides.
- Finely grate the Gouda. Pour the plain flour into one bowl and beat the eggs with hot water in another.
- Preheat the oven to 200 °C and line a baking tray with baking paper.
- Coat the chicken cutlets in flour, egg, then flour and egg again. Finally, coat them thoroughly on all sides in grated Gouda and place in the prepared baking dish. Drizzle with oil or spread small pieces of lard on them.
- Bake at 200°C for approximately 25–30 minutes. Carefully turn the cutlets over about halfway through baking. The finished meat should be fully cooked inside and the cheese coating should be golden brown.
- Serve the baked chicken cutlets immediately.
