Five savory strudels

Puff pastry is simply brilliant in its versatility. Thanks to its neutral buttery taste, it can be combined with almost anything. A savory dessert, crunchy and juicy at the same time, full of flavors that will not offend anyone. It comes in handy as a light lunch or a party treat.

Ingredients · Servings 1 dose
  • 2 packages of refrigerated puff pastry
  • breadcrumbs
  • 2 beaten eggs for brushing
  • sesame seeds for sprinkling
  • Strudel with bacon, pears and blue cheese:
  • 150 g English bacon (or seasoned flank)
  • 1 large pear compote (8 halves of compote pears)
  • 100 g blue cheese
  • Smoked salmon strudel:
  • 100 g smoked salmon
  • 200 g fresh baby spinach
  • 2 chopped garlic cloves
  • 50 g mascarpone (can be replaced with ricotta or spreadable butter)
  • Strudel with sardines, eggs and red onion:
  • 1-2 cans of sardines in mustard sauce (or herring in mustard sauce)
  • 2-3 hard-boiled eggs

  • 1 large cheddar cheese
  • 70 g sliced ​​cheese
  • 2 tablespoons of compote of cranberries
  • Spicy pizza strudel:
  • 2 tablespoons pepper pesto
  • 50 g Chorizo ​​sausage
  • 4 sun-dried tomatoes in oil - drained
  • 50 g green olives
  • 30 g crumbled blue cheese
  • 1 tomato without pulp
Method · 1 h 30 min
  1. Preheat the oven to 230 °C.
  2. Divide both packages of puff pastry into 3 parts to make 6 strudels.
  3. Strudel with bacon, pears and blue cheese: Roll out the puff pastry, sprinkle the middle with breadcrumbs and place slices of bacon, pieces of pears and slices of blue cheese. Fold over, brush the surface with beaten egg and sprinkle with sesame seeds.
  4. Smoked salmon strudel: Roll out the puff pastry, sprinkle the middle with breadcrumbs and top with slices of smoked salmon, spinach, chopped garlic and dollops of mascarpone (or its alternative). Roll up, brush with egg and sprinkle with sesame seeds.
  5. Sardine, egg and red onion strudel: Roll out the puff pastry, sprinkle the middle with breadcrumbs, top with fish, slices of hard-boiled eggs, salt and red onion, cut into very thin slices. Roll up, brush the surface with beaten egg and sprinkle with sesame seeds.
  6. Strudel with Camembert and Cranberries: Roll out the puff pastry, add slices of hard cheese, Camembert pieces and drizzle with cranberry compote. Roll up, brush the surface with beaten egg and sprinkle with sesame seeds.
  7. Spicy pizza-flavored strudel: Roll out the puff pastry, spread with pepper pesto, top with chorizo ​​slices, sun-dried tomatoes cut into strips, crumbled blue cheese, olive slices and a tomato with the pulp removed. Roll up, brush the surface with a beaten egg and sprinkle with sesame seeds.
  8. Place the rolls on a baking sheet lined with baking paper and bake in an oven set at 220-230 °C for 20-25 minutes, checking their surface colour.
