Sweet Pepper Salad with Spicy Dressing

Sweet peppers marinated with citrus are a truly intriguing appetizer that will delight you with their striking appearance, stunning aroma, and distinctive flavor. They're perfect for a light snack, a side dish for meat, or a topping for bruschetta.

Ingredients · Servings 4
  • Olive oil
  • Pitted olives
  • Garlic
  • Almonds (raw)
  • Red sweet pepper
Method · 30 min
  1. Prepare the dressing. Peel and mince the garlic. Chop the almonds and olives with a knife or blend them into fine crumbs and place in a bowl. Add the garlic and olive oil and mix thoroughly.
  2. Wash the peppers and cut into thin strips, removing the core.
  3. Place the peppers in a bowl, add the prepared dressing, and mix thoroughly. Refrigerate for 30 minutes. Serve not only as a salad, but also as a side dish for meat, poultry, or fish.

This baked pepper, feta, and white bean salad is a perfect example of a wonderful combination of vegetables and legumes. The beans and feta cheese, rich in protein, make this salad truly filling. Bell peppers, cherry tomatoes, arugula, and basil provide a rich flavor and a variety of vitamins. Incidentally, not only vegetables and greens, but also beans are rich in fiber—a healthy nutrient we often lack in our diets. Another reason to make this salad with a light Mediterranean dressing! Note that roasting the bell peppers first changes their texture from crisp to soft, making them a perfect companion to the tender white beans.
