Leftover mashed potatoes come to life: we show you how!
Fry the bacon slices in a pan over medium heat until medium-brown – the key is not to fry them until dry – then set aside.
Add the melted vegetable mix to the remaining fat. Turn the heat to high and fry until very brown, adding salt and pepper.
While the vegetables are browning, chop the pre-fried bacon into strips and mix into the mashed potatoes. Beat in an egg, mix in the cheese cut into small inch cubes, and then press in the mustard.
Cut the onion into large cubes, slice the garlic, then add both to the browning vegetables. Stir, then add the potato mixture to the pan. Stir the remaining mashed potato mixture with the vegetables, and flatten the whole thing so that it browns on a large surface. Turn it over a few times to get the browned parts inside, then flatten it again.
When it is cooked through, carefully slide it onto a plate.
For the fried eggs, pour the oil into the pan we used earlier, heat it up, and then crack the eggs in. The bottom will be crispy due to the abundance of fat, but that's what makes it so incredibly good.
