Golden Macadamia Stars

Golden macadamia stars, coated in white chocolate and decorated with nuts, are a delight on any cookie plate. A Christmas recipe from celebrity chef Johann Lafer.

Ingredients · Servings For approximately 30 pieces
  • 250 g Butter
  • 150 g sugar
  • 375 g flour
  • 200 g salted macadamia nuts
  • 1 pinch of salt
  • 1 egg (size M)
  • 1 tbsp liquid honey
  • 1/2 tsp cinnamon
  • White chocolate coating
  • Mini gold stars or gold dust
Method · 1 h 12 min
  1. Dice the butter and knead it together with the sugar, egg, flour, and salt to form a smooth dough. Wrap the dough in plastic wrap and chill for about 1 hour.
  2. Preheat the oven to 180°C (350°F). Roughly chop the macadamia nuts, mix with honey and cinnamon, and spread evenly on a sheet of parchment paper. Caramelize the nuts in the preheated oven on the middle rack for about 8–10 minutes, or until golden brown. Stir occasionally with a spatula. Then let cool.
  3. Roll out the dough on a floured work surface to a thickness of about 3–5 mm. Cut out cookies using a star-shaped cookie cutter (approx. 5–6 cm in diameter) and place them side by side on a baking sheet lined with parchment paper. Bake the cookies in a preheated oven on the middle rack for about 10–12 minutes, or until golden brown. Remove from the oven and let cool on the baking sheets.
  4. Chop the chocolate into small pieces and melt it in a small bowl over a hot water bath. Brush the cookies thinly with the melted chocolate using a pastry brush, then sprinkle with the caramelized nuts and, if using, gold star sprinkles. Let the chocolate harden. If desired, dust with gold dust.

Roll out the dough on a floured work surface to a thickness of approximately 3–5 mm. Cut out cookies using a star-shaped cookie cutter (approx. 5–6 cm in diameter) and place them side by side on a baking sheet lined with parchment paper.

Place the cookies in a preheated oven on the middle rack and bake for approximately 10–12 minutes until golden brown. Remove and let cool on the baking sheets.
