This mushroom soup is the kind you want to savor from the very first spoonful. Made with French shallots and three containers of mushrooms, it boasts bold flavors while remaining simple and approachable. Vegetable broth forms the base, while 15% cooking cream adds just the right amount of creaminess. The result: a comforting soup, perfect for cooler days or for adding a warm touch to your weeknight menu.

45 ml (3 tbsp) of butter

Optional:

30 ml (2 tbsp) of chopped fresh parsley

Steps

In a saucepan, melt the butter over medium heat. Cook the shallots for 1 to 2 minutes.

Add the mushrooms. Cook for 2 to 3 minutes.

Sprinkle with flour and stir. Pour in the vegetable stock. Bring to a boil, then simmer for 15 minutes over medium heat.

Transfer the mixture to the container of an electric mixer. Add the cream. Mix for 1 minute, until smooth and creamy.

Return the mixture to the saucepan and reheat for 1 minute.

Divide the soup among the bowls. If desired, sprinkle with parsley.
