The Best Gourmet Croissant with smoked salmon now has its own competition at Madrid Fusion Food of Spain 2026

The competition presents a culinary challenge based on the creation, reinterpretation, or innovative version of the classic croissant filled with smoked salmon. Its aim is to test the culinary creativity, technique, and presentation of the participants using a recognizable yet highly versatile ingredient, smoked salmon, which pairs perfectly with the star of fine pastries: the croissant.

The grand final of this competition will be held during the XXIV International Gastronomy Summit Madrid Fusión Alimentos de España 2026, which will take place at IFEMA on January 26, 27 and 28 in pavilions 14.0 and 14.1.

The competition will be governed by the following rules:

• Participants will submit a single recipe featuring a gourmet croissant filled with smoked salmon.
• The recipe must include a technical sheet indicating the ingredients and preparation process. It must also be accompanied by a high-resolution photograph, at least 300 dpi, in .jpg format.

• The deadline for receiving prescriptions is 23:59 on January 3, 2026.
• From all the recipes received, the 6 recipes that will go on to the final will be selected.
• The final will take place, in principle, on Monday, January 26, within the framework of Madrid Fusion Foods of Spain 2026 (Madrid Fusion Pastry stage, pavilion 14.0).
• The finalists will be invited to prepare, or if necessary, finish and plate their dishes before the jury, within one hour. Ahumados Domínguez will provide the smoked salmon required for the recipe.
• The finalists will not be allowed to bring an assistant to help them finish the dish.
• The jury will proclaim a single winner of the contest, who will receive as a prize a Suprême smoked salmon, hand-cut (exclusive piece) and a dinner for two people at Zalacaín (Madrid), worth up to €500.
• Travel and accommodation expenses for contestants who advance to the final are their own responsibility.
• Voluntary participation in this contest implies full acceptance of these general terms and conditions. Recognition as a valid participant is subject to compliance with the requirements established in these terms and conditions.
• Ahumados Domínguez reserves the right to include the finalists' recipes and their images in its corporate media (catalogs, brochures, website, social media, app, etc.) along with the image and data of their authors, as well as to reproduce said recipes in photo sessions or other events whenever it deems appropriate.
• Ahumados Domínguez reserves the right to suspend, postpone, cancel or modify the duration of the competition at any time prior to its completion, provided there are reasons that justify it, such as the change of dates of celebration by the organization of Madrid Fusión Alimentos de España if there were a critical health situation.
