Toasted bread with spinach and chickpea cream and carrots

Can of chickpeas (240g drained weight)

  • 100 g Baby-Blattspinat
  • 1 Knoblauchzehe
  • 1 Dose Kichererbse
  • 4 El Olivenöl
  • 1 Tl Raz el Hanout
  • Salz
  • Pfeffer
  • 200 g Möhre
  • 2 El Honig
  • 1 El Butter
  • 3 Scheiben Bauernbrot
Method · 35 min
  1. Spinat putzen, waschen und trocken schleudern. 20 g Spinat beiseitelegen. Knoblauch fein würfeln. Kichererbsen in ein Sieb geben, mit kaltem Wasser abspülen und gut abtropfen lassen. 80 g Spinat, Knoblauch, Kichererbsen, Olivenöl, Raz el Hanout und 50 ml Wasser in einen Küchenmixer geben und fein pürieren. Mit Salz und Pfeffer kräftig abschmecken.
  2. Möhren schälen und in etwa 5 mm dicke Scheiben schneiden. Mit Salz, Pfeffer und Honig vermengen. Butter bei mittlerer Hitze in einer Pfanne schmelzen lassen und darin die Möhren 4 Minuten dünsten.
  3. Brotscheiben in einer Pfanne ohne Fett anrösten. Geröstete Brotscheiben mit der Spinat-KichererbsenCreme bestreichen. Gebratene Möhren und Spinatblätter darauf verteilen und mit etwas Pfeffer bestreut servieren.
  • Clean, wash, and spin-dry the spinach. Set aside 20g of spinach. Finely dice the garlic. Place the chickpeas in a sieve, rinse with cold water, and drain well. Combine 80g of spinach, the garlic, chickpeas, olive oil, Ras el Hanout, and 50ml of water in a food processor and blend until smooth. Season generously with salt and pepper.
  • Peel the carrots and cut them into slices about 5 mm thick. Mix with salt, pepper, and honey. Melt butter in a pan over medium heat and sauté the carrots for 4 minutes.
  • Toast bread slices in a pan without oil. Spread the toasted bread slices with the spinach and chickpea cream. Distribute roasted carrots and spinach leaves on top and serve sprinkled with a little pepper.
