Spicy Sausage Quesadilla with Fresh Tomato Salsa

This quick and versatile Mexican dish is perfect as a starter or a satisfying breakfast or brunch. The spicy sausages and the vibrant colors of red and hot peppers mingle with the freshness of green onions.

Spicy Sausage Quesadilla with Fresh Tomato Salsa

To make it even more delicious, add a side of fresh salsa featuring succulent tomatoes, peppers, and cucumber, all perfectly seasoned with a drizzle of olive oil, lime juice, salt, and pepper. Enjoy!

Ingredients

  • 200 g spicy sausage
  • 1 red pepper
  • 1 chili pepper
  • 2 green onions
  • 400 g grated cheese
  • 4 pcs tortilla

Fresh Tomato Salsa

  • 3 tomatoes
  • 1 pepper
  • 1 cucumber
  • 1 tbsp olive oil
  • salt
  • pepper
  • 1 lime juiced

Instructions

  • Cut the sausages and green onions into small rounds and cut the peppers into cubes.
  • Add the grated cheese and divide the mix between 4 tortillas, covering half of their surface.
  • Wrap the tortillas and cook them in a sandwich maker until the cheese has melted and the tortillas begin to brown and become crispy.
  • For the fresh salsa cut the vegetables into small cubes and season with pepper salt, lime juice and a little olive oil.
  • They can be placed either on a platter, where everyone can serve themselves, or directly on plates.
