Falafel mezze nachos

- 1 small Lebanese cucumber, diced

Falafel mezze nachos
Ingredients · Servings 1
  • 1 Lebanese bread
  • Olive oil spray
  • Pinch of cooking salt
  • ½ large tomato, diced
  • 1 small Lebanese cucumber, diced
  • 1 red radish, thinly sliced
  • 5-6 pre-made falafels, heated
  • 1-2 pickled cucumbers or pickled radishes, diced (optional)
  • ¼ cup tahini
  • 2 tbsp extra virgin olive oil
  • Juice of ½ lemon
  • 1 small garlic clove, crushed
  • Pinch of cooking salt
  • 2-3 tbsp water
Method · 15 min
  1. Preheat the oven to 190°C and line a baking tray.
  2. Tear or cut the Lebanese bread into chip-sized pieces and spread them over the tray. Lightly spray with olive oil, season with salt and toss to coat evenly.
  3. Bake for 15 minutes, turning halfway, until golden and crisp.
  4. Meanwhile, dice the tomato and cucumber, thinly slice the radish and heat the falafels. For the crispiest result, use an air fryer rather than a microwave.
  5. To make the tahini sauce, whisk together the tahini, olive oil, lemon juice, garlic and salt. Gradually whisk in 2 to 3 tablespoons of water until smooth and pourable.
  6. To assemble, layer the crispy Lebanese bread chips onto a serving platter or into a bowl. Top with the falafels, tomato, cucumber, radish and pickles, if using. Finish with a generous drizzle of tahini sauce and serve immediately.

Oven temperatures are for conventional; if using fan-forced (convection), reduce the temperature by 20˚C. | We use Australian tablespoons and cups: 1 teaspoon equals 5 ml; 1 tablespoon equals 20 ml; 1 cup equals 250 ml. | All herbs are fresh (unless specified) and cups are lightly packed. | All vegetables are medium size and peeled, unless specified. | All eggs are 55-60 g, unless specified.
