Omelet with ham and cheese

Airy French omelet with ham and cheese, it's a classic and it tastes heavenly.

I really like omelets for breakfast, and make them quite often since we always have eggs in stock. If you don't know what to make, you can always make an omelet, it's a good dish to have in your repertoire.

Here I add the delicious cheese and a good country ham, and I often serve with a slice of good sourdough bread or toasted rye bread, but you can also just enjoy the dish as it is.

3 eggs

30g Comté cheese

1 slice of country ham

salt and freshly ground pepper

1 tablespoon olive oil

10g butter

Place a sieve over a bowl and crack the eggs into the sieve. Beat the eggs into the sieve until all the egg mixture has been sieved.

Whisk in salt and freshly ground pepper.

Heat a pan with oil, add butter and let it shimmer. Put the beaten eggs on the hot pan. Stir in the egg mixture with a dough scraper for 15-20 seconds. Add the grated cheese and ham, cut into strips, in the middle and then fold the omelette towards the middle while it is still soft in the middle. Let the omelette rest on the hot pan for 5-10 seconds before turning it over onto a plate.

Serve on a plate with a sprinkle of finely chopped chives and freshly ground pepper.
