The solution

To achieve a fluffy, fluffy consistency, you need to mix the eggs and sugar thoroughly. The final result should be a fluffy, whitish mixture that has practically tripled in volume. Also, pay close attention to how the cake is cooked. The toothpick test should indicate a small amount of moisture; otherwise, it means you've baked it too long and it will be dry. At the same time, you shouldn't undercook it, otherwise the inside will be heavy and visibly raw and rubbery.

Another recurring issue concerns taste: cocoa often remains only a pleasant memory, when it should be predominant. It's therefore important to choose top-quality raw materials.

How to do it?

The chocolate should contain no less than sixty percent cocoa to impart a distinctive, distinctive flavor. Furthermore, always choose a product with a low butter or oil content relative to the cocoa content. It should preferably not contain added sugar, otherwise it will simply be a substitute that will ruin the flavor and even the consistency of the mixture. Finally, another trick for achieving a moist, melt-in-the-mouth consistency is to beat the egg whites very well, with a pinch of salt.

Some people complain about a consistency that's too thick. This happens when you use the wrong ingredients: many mistakenly think buying and using almond flour is a good idea to save time. But that's exactly the problem!

The secret revealed

To make a perfect Caprese cake, you need to use fresh almonds, not almond flour, which has an excessively fine grain. The ideal method, instead, involves very lightly toasting the nuts, which are then blended, while maintaining a coarser grain. Another point to note regarding the use of alternative flours: although some recipes call for it, use only blended almonds.

Regarding the final flavor, a recurring problem can be a cloying orange aroma. This occurs in one particular case, namely when using the standard commercial vials.

How to get a perfectly balanced taste

The original Caprese recipe calls for grated orange peel. Obviously, to avoid ruining the final flavor, it's best to use this or, alternatively, natural flavors. The original Caprese cake recipe

Ingredients

  • 300 g of peeled almonds
  • 200 g of sugar
  • 30 g of bitter cocoa
  • 200 g of butter
  • 200 g of 60% dark chocolate
  • 5 eggs A pinch of salt Grated peel of an orange A spoonful of rum (optional) Icing sugar to taste

Cake preparation

To make this dessert, start by separating the egg yolks from the egg whites and placing them in two separate bowls. Beat the egg yolks with the sugar using an electric mixer for at least ten minutes, until tripled in volume. Separately, beat the egg whites until stiff with a pinch of salt, and briefly toast the almonds. Place the almonds in a blender with the unsweetened cocoa powder and blend in batches, leaving the coarser grains.

At this point, melt the chocolate in a double boiler with the butter, let it cool slightly, and then slowly add the melted chocolate to the egg yolk and sugar mixture, alternating with the chopped almonds. Finally, add the grated orange zest, rum, and egg whites, stirring from the bottom up.

Pour the batter into a 22-24 cm springform pan lined with parchment paper. Bake at 170°C (340°F) for about 40 minutes, checking for doneness with a toothpick. The toothpick should come out almost dry, as the internal texture must remain soft. Once done, let the cake cool in the oven with the door open, remove it from the pan, and dust it with powdered sugar. You'll be amazed how delicious it is!
