Ingredients for approximately 8/10 portions.

  • 500 ml of fresh liquid cream
  • 250 g of fresh whipping cream
  • 250 g of mascarpone
  • 150 g of sugar
  • 200 g of milk or dark chocolate
  • 8 g of gelatine sheets

Preparation of the mascarpone and chocolate mousse

To make this fantastic mousse, start by pouring the sugar into a saucepan, caramelize it, being careful not to burn it, gradually add the liquid cream and mix vigorously until you obtain a smooth and homogeneous mixture.

Once the mixture is well combined, turn off the heat and remove the saucepan from the heat. Add the chopped milk or dark chocolate and continue stirring until completely melted.

Finally, add the gelatin, previously soaked in cold water after wringing it out well, mix, and let cool. Meanwhile, in a bowl, whip the cream until stiff, then fold in the mascarpone and mix thoroughly. Once the mixture has almost cooled, combine all the ingredients and mix using circular motions from the bottom up. Pour the mousse into molds or cups of your choice and refrigerate until ready to serve with your favorite garnish. Enjoy!
