These cookies are incredibly soft, and once made, you can store them in a tin and keep them for days. You'll see, they'll disappear quickly; I've learned to make a double batch.
2 egg yolks 100 g butter 75 g sugar 180 g flour grated peel of an organic orange orange marmalade without added sugar to taste

To prepare these cookies, start by removing the eggs and butter from the refrigerator at least half an hour before baking. Then, separate the yolks from the whites. Here's how to do it correctly.
Then place both the butter and the egg yolks in a bowl and, using an electric whisk, mix until the mixture becomes creamy.
Then we can add the sifted flour, it is recommended to add it in spoonfuls so that the flour is absorbed little by little, we also add the grated peel of an orange and the sugar.
We work everything together until we obtain a soft dough, which we then wrap in plastic wrap. We need to let it rest in the refrigerator for an hour.
After the time has elapsed, we take the dough and work it on a lightly floured work surface, using a pastry cutter we create the biscuits and then press a little into the centre of each biscuit.
Place them on a baking tray lined with baking paper, add the jam, and bake in a preheated oven at 180°C for about 12-15 minutes, or until the edges of the biscuits are lightly golden.
Turn off the oven and let the biscuits cool on the baking tray for a few minutes before adding the icing sugar.
