Lemon and chocolate biscuits, a bitter aftertaste amidst the sweetness of the chocolate

These lemon and chocolate cookies are truly exquisite. The chocolate makes everything appealing, but the lemon makes it bold and different from the usual standards.

Easy and fairly quick to prepare. Everything's ready in no time, without even dirtying any dishes. For those who love kneading, this is a great way to make sure you never get bored.

Ingredients

  • 3/4 cup unsalted margarine
  • 1 cup brown sugar
  • 1 egg
  • 1 teaspoon pure vanilla extract
  • 1/2 teaspoon baking soda

  • 2 cups flour

Preheat the oven to 200°C (400°F). In the bowl of a stand mixer, mix the margarine and brown sugar for 2-3 minutes. Add the egg and vanilla, then add the baking soda, salt, and cinnamon and mix together. Add the flour and mix on low until fully combined.

Add the walnuts and mix everything together. Wrap the smooth, soft dough ball in plastic wrap and refrigerate for an hour. Take the dough and divide it into portions, forming 1-inch balls. Roll them in cinnamon sugar and place them on cookie sheets lined with ungreased aluminum foil or parchment paper.

Bake each tray in the center of the oven for 10-12 minutes, or until the bottoms of the cookies are lightly golden.
