Sweet or savory milk rolls
Sweet or savory milk rolls are excellent for fillings once baked, but they can also be served raw. Try them as a snack or for a buffet.
Let's look at the ingredients and steps to prepare them at home. It's important to remember that this is a leavened dough, so you need to calculate the rising times. However, they're very simple to make.
Preparation time: 30′ Cooking time: 15′.
INGREDIENTS (serves 8 sandwiches)
- 200 g of Manitoba flour
- 50 g of 00 flour
- 1 egg
- 4 teaspoons of granulated sugar – for the savoury version, halve the doses
- 1 teaspoon fine salt
- 150 g of milk
- 5 g of fresh brewer's yeast
Sweet or savory milk rolls, preparation:
To make these rolls, start by combining the warm milk, sugar, and yeast in a bowl. Stir well until the yeast has dissolved, then add the egg, flour, and vanilla. Knead the dough, then add a pinch of salt at the end.
Work the dough well, and when it's firm, spread it out and add the butter to the center. Knead well, folding the dough into folds. Let it rise in a warm place, such as an oven with the light on, for at least 3 hours.
After the indicated time, or until the dough has risen well, shape it into a sausage shape. Cut it into equal portions, obtaining 8 of them. Roll them out with a rolling pin to obtain strips of dough 15 cm long and 5 cm wide. From the shortest side, roll them lengthwise and shape them into a bun. Once all the buns are formed, let them rise for another 2-3 hours, spaced well apart. Finally, when they are nice and puffy, brush them with milk and bake in a preheated oven at 180°C for 15 minutes.
