Ingredients for the chocolate margherita cake

  • 150 g of sugar
  • 90 g of butter
  • 50 g of 00 flour
  • 50 g of potato starch
  • 40 g of bitter cocoa powder
  • 3 whole eggs
  • 3 egg yolks
  • 1 pinch of baking powder
  • 1 pinch of salt

Step-by-step procedure for a soft cake

  • First, place the three whole eggs in a large bowl with the sugar. Beat them with an electric whisk or a stand mixer for about 5 minutes. Don't rush: you should obtain a light, fluffy, and decidedly frothy mixture, as this step contributes to the final softness of the cake.
  • Once the eggs and sugar are well combined, add the three egg yolks one at a time. Incorporate the first one and wait until it's completely absorbed before adding the next. Continue in this manner until all the egg yolks are used up.
