Recipe for sea bream fillet with vanilla

Ingredients · Servings 4
  • 4 sea bream fillets
  • 2 shallots
  • 2 vanilla pods
  • 1 teaspoon of veal stock
  • 25cl of thick fresh cream
  • 1 glass of dry white wine
  • Butter, salt and pepper
Method · 15 min
  1. Melt a knob of butter in a pan and sear the fish fillets. Set aside in a covered dish.
  2. Open the vanilla pods lengthwise and scrape out the pulp.
  3. Gently brown the shallots in the pan, incorporating the vanilla pulp. Add the veal stock.
  4. Deglaze with white wine and finish by stirring in the cream. Season with salt and pepper.
  5. Cook the fish fillets in the sauce for 5 minutes.
