Chorizo ​​beans in spicy tomato sauce

An easy variation on the classic baked beans, with beans in a delicious spicy tomato sauce. It's a really delicious serving for brunch or a breakfast when you need something warming and comforting!

I serve the dish with good slices of bread, and then you have a nutritious meal that fills you up nicely for a long time.

While my baked beans recipe is in the simmering category and takes its time to become perfect, this dish can be ready to serve in about 30-40 minutes. Here I cook everything in one pan and have made a faster version of the well-known classic.

30g chorizo

1 onion

2 cloves garlic

40 g sun-dried tomatoes in oil

1 can of cannellini beans

400 g canned chopped tomatoes

1 tsp brown sugar

1 teaspoon sweet paprika

½ teaspoon smoked paprika

1 teaspoon ground cumin

½ teaspoon chili flakes

1 tablespoon olive oil

salt and freshly ground pepper

Poached egg

4 eggs

1 tablespoon apple cider vinegar

For serving

4 slices of bread

½ cup parsley, finely chopped

Heat a pan with oil over medium heat and sauté the chorizo, onion, garlic and sun-dried tomatoes until the onions are soft. Add the beans, chopped tomatoes, brown sugar and spices and bring to the boil. Simmer for 4-5 minutes and season well with salt and freshly ground pepper. Simmer gently while you prepare the rest of the dish.

Poached Eggs Bring a pot of water to the boil. Crack each egg into a small bowl. Add the apple cider vinegar when the water boils and remove the pan from the direct heat. Use a spoon or whisk to make a swirl in the water, creating a hole in the centre. Place an egg in the centre of the swirl and return the pan to the heat. Boil the egg for about 3 minutes, carefully remove it with a slotted spoon and place it on a plate – continue in the same way with the other eggs. Finally, trim the eggs with a sharp knife so that they are nice and smooth on the surface.

Serving Toast the bread and spread it with a little butter. Spread the chorizo ​​beans in spicy tomato sauce on the bread, top with poached egg and sprinkle with parsley. Serve immediately.
