One pot french onion pasta

You may know French onion soup – and this one pot French onion pasta is a delicious variation of that dish. A pasta dish with soft, caramelized onions with pasta, creamy cheese sauce and stuffed with delicious flavor.

One pot french onion pasta is a really good everyday dish that is easy and quick to prepare and very budget-friendly. The classic French onion soup is served with cheese bread, and here I add cheese to the dish instead to smooth the sauce, and the result is creamy and a really fluffy comfort food.

4 onions, halved and thinly sliced

3 cloves garlic, finely chopped

1 teaspoon dried thyme

1 dl white wine

400g pasta

8 dl vegetable broth

1 dl whipping cream

1 tablespoon balsamic vinegar

175 g Emmental or Gruyere, coarsely grated

1 handful of broad-leaf parsley, finely chopped

15 g butter, for frying

1 tablespoon olive oil, for frying

salt and freshly ground pepper

Place the onions in a pan with the oil and butter and sauté over medium-low heat for 30 minutes, stirring frequently, until the onions are soft, sweet and lightly caramelized.

Add garlic, thyme and white wine, pasta, vegetable stock and whipping cream. Stir well for 5 minutes. Cover and bring to a boil.

Cook for about 10 minutes or until the pasta is perfectly tender. Season with salt, freshly ground pepper and balsamic vinegar. Stir in the grated cheese and stir well until the cheese is melted and the sauce is smooth.

Serve immediately with a sprinkle of broad-leaf parsley and freshly ground pepper.
