Creamy ground meat soup with an Asian twist. Something new for a family dinner

Summer doesn't always spoil us with beautiful weather. On colder days, we often crave a warming meal. However, lighter dishes are better than fatty and filling ones. Such is the case with Asian minced meat soup.

Ingredients · Servings 3-4 people
  • 2 cm of ginger root
  • 2 cloves of garlic
  • 2 shallots
  • ½ yellow pepper
  • chili pepper (to taste)
  • 2 tablespoons of curry paste
  • 300 g pork shoulder
  • 750 ml vegetable broth
  • 250 ml coconut milk
  • 3 tablespoons of fish sauce
  • 1 teaspoon lime juice
  • a handful of Thai basil leaves
  • coconut oil (for frying)
Method · 1 h
  1. Grate the ginger finely. Chop the garlic. Dice the shallot and yellow bell pepper. Halve the chili pepper lengthwise. Remove the seeds and cut the flesh into slices.
  2. Heat some coconut oil in a pot. Sauté the onion and both peppers. Add the ginger and garlic, followed by the curry paste.
  3. Once the vegetables have softened slightly, add the meat to the pan. Cook until browned. Stir occasionally to prevent lumps.
  4. Pour hot broth into a pot. Bring to a boil. Add fish sauce. Cover and simmer for about 10 minutes.
  5. Combine the soup with the coconut milk (mix the contents of the package thoroughly before adding it to the broth). Add the basil leaves and lime juice. Stir. Cook for another 2-3 minutes.
  6. Serve the ready-made Asian soup with minced meat with noodles (rice, soy...).
