Making chocolate salami without butter and eggs
To make this dessert, start by roughly chopping the dark chocolate and melting it in a double boiler, stirring constantly. Then, turn off the heat and let it cool. Place the biscuits in a blender and blend very finely. Then, in a large bowl, pour in the melted chocolate and ricotta, stirring gently.
At this point, add a couple of tablespoons of powdered sugar, mix well, and then add the biscuits and chopped hazelnuts. Knead until smooth and compact; add more chopped biscuits if necessary. Transfer the dough to a sheet of parchment paper and shape it into a cylinder. Roll it up and seal the ends.
Refrigerate for about a couple of hours: the longer it rests, the firmer it will be. When ready to serve, roll it in powdered sugar, cut into slices, and enjoy!
