Plum jam with chocolate

This jam was once very popular, but the couple of recipes I tried back then left me indifferent to the combination. Last year, I decided to try a new version, and we absolutely loved it! Its deep, velvety plum-chocolate flavor with hints of spice won me over immediately. Excellent jam, I highly recommend it!

Recipe "Plum jam with chocolate":

Wash the plums, dry them, cut them into halves and remove the pits.

Grind the plums using a food processor or meat grinder.

Place the mixture into a cooking container; I use a Kukmar roaster, which is where I make most of my preparations.

Add sugar there.

Mix well. Place over medium heat and bring to a boil, stirring occasionally. Add star anise and cinnamon, and pour in the cognac.

Cook over low heat for 30 minutes, skimming off any foam.

The jam is almost ready.

Add chocolate (at least 56%, preferably more).

Stir thoroughly until the chocolate dissolves.

Pour the hot prepared jam into sterilized jars.

Roll up, turn over and put under a blanket until completely cool.
