Stefan's delicious pumpkin goulash is a hearty yet slightly sweet dish that captures the flavors of autumn and coziness. The pumpkin is enhanced with the aromatic flavors of bell peppers and tomatoes. Onions and garlic add extra flavor, while spices like curry, ginger, and star anise lend the dish a warming harmony. The interplay of firm pumpkin pieces and a rich, creamy sauce makes the goulash particularly delicious. Stefan also adds zucchini pieces and seasons it with fresh thyme, parsley, and lemon zest. It's perfect served with crusty country bread. The dish is rich yet light, with a smooth consistency that makes every bite a delight. Enjoy cooking and eating it!
