My strawberry cheesecake is incredibly light, only 120 calories. I don't use butter, but oil, which I mix with crushed biscuits. For the filling, I use stevia, not sugar, Greek yogurt, and low-fat ricotta. What's lighter than that?
After making the cheesecake, we can store it in the refrigerator in an airtight container for a couple of days.
For the base
250 g of dry digestive biscuits 100 ml of seed oil
For the filling
- 8 sheets of gelatin
- 250 g of Greek yogurt
- 300 g of light ricotta
- 80 g of stevia
- 60 g of white chocolate grated lemon zest strawberries to taste strawberry jam without added sugar to taste

To make this cheesecake, we recommend grinding the biscuits in a food processor or using a mortar and pestle. Pour the biscuits into the bowl, add the oil, mix, and then pour into the springform pan lined with parchment paper.
Meanwhile, let's prepare the filling. First, place the gelatin in a small bowl with water and let it soften. Then, squeeze it out and set aside. In a bowl, combine the Greek yogurt, light ricotta, stevia, white chocolate (melted in the microwave), and grated lemon zest. Stir together, then add the gelatin and mix well.
Remove the crust from the refrigerator and pour in the filling. Level it out, cover with a little strawberry jam, and add the washed strawberries. Follow our tips to avoid mistakes. Then, cut them and decorate the cheesecake. Let it set in the refrigerator for a couple of hours and serve.
