Pumpkin and almond flan

Ingredients
- 500g diced pumpkin
- 100 g toasted and finely chopped almonds.
Preparation
- Boil the pumpkin until soft. Drain well and mash to obtain a smooth puree.
- In a large bowl, combine the pumpkin puree, chopped almonds, eggs, grated Parmesan cheese, and milk. Mix well until smooth. Season with salt and black pepper to taste.
- Butter the individual molds and sprinkle them with breadcrumbs to prevent the flan from sticking. Pour the mixture into the prepared containers, smoothing the surface with a spatula.
- Bake in a preheated oven at 180°C for about 30-35 minutes, or until the flan is golden on the surface and well set in the center.
Carefully remove the pumpkin and almond flan and serve on individual plates. You can garnish the terrine with a sprinkle of additional toasted almonds and a fresh thyme leaf for a touch of freshness. Serve with a generous helping of cheese sauce or a balsamic reduction.
