Salmon in butter

The delicate salmon meat only needs a little seasoning, too much seasoning would be detrimental. To enhance the flavor, we prepare it in butter, scent it with fresh herbs and serve it with mashed potatoes.

  • 1 filet lososa
  • fresh basil
  • 1 sprig of rosemary
  • Provencal herbs
  • salt
  • 1 citron
  • 1 stick of butter

  • 660 g potatoes
  • a little milk (or cream)
  • salt
  • 1 stick of butter
Method · 55 min
  1. Remove the scales from the salmon fillet, divide it into pieces, salt it, drizzle with lemon juice and sprinkle with Provencal herbs.
  2. Boil the potatoes in their skins, mash them into a coarse mash with butter, milk or cream, and salt.
  3. Melt the butter in a pan and fry a few lemon peels.
  4. When the crust is fragrant, take it out, place the salmon skin side down and do not turn it!
  5. Add fresh basil on top and cover the pan.
  6. You can also add a little water.
  7. Bake for about 10 minutes, depending on the size of the salmon.
