- 2 eggs
- 150ml of milk

Making cocoa and dark chocolate pancakes
To make this recipe, start by sifting together the flour and cocoa powder in a large bowl, then add the baking powder and a pinch of salt, stirring well to evenly distribute the ingredients. Melt the butter in a nonstick pan over low heat, being careful not to let it brown or burn. Turn off the heat and let it cool.
In another bowl, crack the eggs and beat them with the granulated sugar until light and fluffy. Then, pour in the cooled melted butter and milk. Gradually fold the dry ingredients into the liquid ones. Gently fold together with a spatula or wooden spoon, taking care not to overwork the batter, as this will make the fritters tough. Once the ingredients are well combined, fold in the chopped dark chocolate, stirring until evenly distributed.
Let it rest for about 15-20 minutes, covering the pan with a clean cloth and placing it in a draft-free area. After the required time, grease a small pan with a knob of butter. Turn the heat to low and heat thoroughly, then take a ladle and pour in a small amount of batter. Cover and cook each fritter for a few minutes on each side until puffed. Continue cooking until all the batter is used. While the fritters are still warm, dust them with powdered sugar for an extra touch of sweetness. You can serve them hot or at room temperature, perhaps accompanied by chocolate sauce or hazelnut spread for an even more indulgent experience!
