The world of börek has expanded even further over time. Recipes have emerged using almost every ingredient except melon and watermelon.
Leek pastry is delicious, economical, and offers a unique taste. It's an invaluable recipe, especially for those who want to feed a large group with a small amount of dough. We prepared this vegetable pastry in the shape of a spiral pastry. However, using the same ingredients, you can also make it as a rolled pastry or a rose-shaped pastry. Let's get started with the preparations.

For the Leek Pastry Filling and Dough:
2 stalks of leeks
3 tablespoons of olive oil
1.5 teaspoons of salt
1/2 cup cottage cheese
2 sheets of phyllo dough (ready-made, freshly baked)
1/2 teaspoon black pepper
For the Leek Pastry Sauce:
4 tablespoons of yogurt
1 egg
1/2 cup of vegetable oil
For the topping of the Leek Pastry:
1 egg yolk
1 teaspoon of nigella seeds
1 teaspoon sesame seeds

Be sure to lightly sauté the leeks before adding them to the filling.
How to Make Leek Pastry?
For leek pastry, cut off the coarse ends of 2 leek stalks. First, cut them in half lengthwise and wash them. Then, slice them thinly into crescent shapes.
Heat 3 tablespoons of olive oil in a pan, add the leeks and begin to sauté.
Once the leeks have softened slightly, add 1.5 teaspoons of salt and 1/2 teaspoon of black pepper and continue sautéing. When thoroughly cooked, remove from heat and let cool.
Once cooled, combine the leeks with 1/2 cup of cottage cheese in a bowl.
For the sauce, mix together 4 tablespoons of yogurt, 1 egg, and 1/2 cup of vegetable oil.
Lay out 2 sheets of phyllo dough and cut them into half-moon shapes. You should have a total of 4 half-moon shaped phyllo dough pieces.
Lay a sheet of phyllo dough on the counter, fold the top and sides over to form a rectangle. Using a brush, spread the sauce evenly over the phyllo dough.
Place the filling along the bottom edge of the pastry sheet.
Next, roll it up into a cylindrical shape. Don't apply too much pressure, but be careful not to let it unravel.
Arrange the rolled phyllo dough sheets on a baking sheet lined with parchment paper, rolling them up tightly. Repeat these steps until all the phyllo dough sheets are used.
Add one egg yolk to the remaining sauce, mix well, and spread it over the pastry. Spread it evenly over the entire surface.
Finally, sprinkle 1 teaspoon each of sesame seeds and nigella seeds on top and bake in a 180-degree oven for 40 minutes.
