Savoyard Fondue, how to make it at home with the recipe by Giuseppe Giovale of Beppe ei suoi formaggi
One of the must-haves at the Ghetto cheese shop is the Savoyard Fondue, made with four different types of French cheeses, mixed in equal parts and then served on a convivial plate at the center of the table. A simple recipe, easy to replicate at home, with tips from Giuseppe Giovale.
- 100 g Comte
- 100 g Beaufort
- 100 g Gruyère
- 100 g Emmental White wine Mustard
Procedure
Pour a glass of white wine into a pan and let it evaporate. Meanwhile, heat a pot of water. When the wine begins to boil, add a tablespoon of mustard and let it dissolve. Place the pan in a bain-marie and add all the diced cheeses. Let them melt. To serve the fondue at the table and keep it warm, pour it into an earthenware bowl with a small candle underneath. Serve with boiled vegetables, such as boiled potatoes, and toasted bread rubbed with garlic.
