  • Chicken egg
  • Tomato
  • Eggplant
  • Zucchini
  • Wheat bread
  • Refined vegetable oil
  • Onions
  • Dry red wine
  • Red sweet pepper
  • Salt
  • Minced meat
  • Parmesan cheese
  • Garlic
Method · 2 h 30 min
  1. Wash and dry the eggplants, zucchini, tomatoes, and peppers, and cut them in half lengthwise. Scoop out the flesh from the eggplants and zucchini, leaving a 0.5–0.7 cm border. Core the tomatoes and peppers. Finely chop the flesh from the eggplants and zucchini. Mash the tomato core with a fork.
  2. Peel the onion and garlic, chop and fry in 2 tbsp of heated oil for 4 minutes.
  3. Add the ground meat. Cook, stirring and breaking up any lumps, for 6 minutes. Add the chopped vegetables, pour in the wine, reduce the heat to low, and cook uncovered for 1 hour.
  4. Place the minced meat in a large bowl and let cool slightly. Add grated Parmesan and mix.
  5. Beat the eggs into the minced meat, season with salt and pepper. Mix again.
  6. Place the prepared vegetables on a greased baking sheet, fill with the resulting filling, sprinkle with bread crumbs, and drizzle with oil. Bake in an oven preheated to 180°C for 30 minutes.
